Vietnamese rice noodle with fried spring rolls, aka bun cha gio (actually I don’t know how to pronounce). Kept a batch of popiahs (spring rolls) in the freezer and they were really useful for a quick meal. For the dressing I added minced garlic, chilli padi, sugar, lime juice, fish sauce and water. 🍲
