– 40-50 ready-to-use wonton wrappers
– 250g / 9oz pork mince
– 150g Chinese chives
– 1 tsp light soy sauce
– 1 pinch ground Sichuan pepper
– 1/4 tsp salt
– 4 tsp chicken stock

FOR EACH BOWL OF SOUP:
1 tbsp Chinese black vinegar
1 tsp light soy sauce
1/2 tsp Chinese sesame oil
1 pinch salt
Spring onion, chopped
Coriander, chopped
Dried papery shrimps
Chinese chilli oil/fresh chilli, to taste
